This week is a Greek inspired salad.
Ingredients:
Spring salad mix with kale
Cucumber
Mini tomatoes
Crumbled feta
Red onion
Grilled chicken
Greek hummus dressing
Dressing:
1/2 c hummus of choice
1/4 c lemon juice
2 T olive oil
1/4 t paprika
Dressing Makes about 6 servings.
